This is the perfect recipe if you do not have a lot of ingredients in the house. I got a message during lockdown from my friend Zelda that said she only got 2 ingredients maize meal and frozen blueberries and she wants to bake gluten-free muffins. After a few test recipes I got to this one. They are light and fluffy, but with that little bit of resistance of the maize flour. I use maize meal and almond flour for this recipe. I have baked it with and without blueberries and both came out perfect.
