Prawn LinguineCourse: Lunch, dinner
This is the perfect quick dinner that will satisfy you in all aspects.
400g dried linguine
¼ cup Van Loveren Pino Grigio
400g uncooked prawns
Zest and juice of one lemon
¼ cup fresh parsley, chopped
2 cloves garlic, finely chopped
2 red chilies, seeded and finely chopped
3 spring onions, sliced
½ cup cream
- Cook the linguine according to the instructions on the package.
- Meanwhile heat the olive oil, garlic and chili in a frying pan over a medium heat. Cook for 1 minute and then add the prawns, spring onions, lemon zest and Pino Grigio. Cook for 3 minutes until the prawns have turned pink. Add the cream and simmer for 2 minutes.
- Drain the cooked pasta well and then return it to the large saucepan over a moderate heat. Pour over the prawn mixture and add the parsley.
- Season to taste.
