This is a super easy recipe to enjoy as a main, snack or a starter. I love the freshness of the salad accompanied by the lemony and herb prawn skewers.
800g prawn, peeled and deveined
¼ cup melted butter
½ cup chopped, basil & parsley
salt and pepper
¼ cup lemon juice
4 cloves garlic, minced
3 cups fresh baby spinach
½ cup blueberries
½ cup almond nuts, chopped
½ cup feta cheese
1 tablespoon olive oil
2 tablespoons balsamic
3 tablespoons honey
- Preheat the oven to 200C. Thread the prawn onto skewers. Place skewers onto a non- stick baking sheet. Place into oven and roast until pink, about 5-7 minutes.
- Melt the butter add the garlic and fresh herbs, season with salt and pepper. Brush the skewers with the butter mix and serve immediately with the blueberry salad.
- Mix together and sprinkle the dressing over the salad.
