Golden Soup with pesto & parmesan (Antioxidant Bomb)

Parmesan cheese is a great mood food. It contains tyrosine, and amino acid involved in brain signaling molecules such as dopamine and stress hormones.
Turmeric – curcumin is a natural anti-inflammatory compound found in turmeric. Turmeric combined with black pepper drastically increases the antioxidant capacity of the body and optimizes function of the liver, the body’s primary organ of detoxification.
Ingredients
1 head cauliflower, chopped into chunks.
1kg carrots, scrubbed and chopped into chunks.
1 onion, quartered.
6 cardamom pods
Salt and pepper
2 TBS olive oil
4 cloves garlic, crushed.
2 TBS grated fresh ginger.
1 tsp ground cumin
1 tsp ground coriander
1 tsp ground turmeric
1 tsp cayenne pepper
4 cups stock veg or chicken.
2 cups coconut milk
4 TBS basil pesto
100g parmesan, grated.
Directions
- Preheat the oven to 200C.
- Place the cauliflower, carrots, onion and garlic on a baking tray, season with salt and pepper and drizzle with olive oil.
- Roast for 30 minutes until they are soft and roasted.
- Heat some olive oil in a pot over medium heat. Add the ginger and spices and sauté for 3 minutes. Add the roasted veggies, stock and coconut milk. Simmer for 30 minutes.
- Remove from heat and blend using a stick or high-speed blender until smooth. Season to taste with salt and pepper and serve with a drizzle of the basil pesto and grated pecorino.
