Unbaked Sago Pudding

The smell of cinnamon always brings me back to my childhood: pancakes, milk tart, “souskluitjies” and sago pudding. Sago pudding is one of those dishes that brings me comfort and also evokes many happy memories. Today, it’s a dish we eagerly look forward to, made every Sunday evening in our home.

Ingredients

  • 1 cup sago

  • 4 cups milk

  • 2 tablespoons butter

  • 2 egg yolks

  • 2 tablespoons sugar

  • A pinch of salt

  • 2 tablespoons golden syrup

  • Ground cinnamon to sprinkle

Directions

  • Soak the sago in 1½ cups of milk until the milk is absorbed. This takes about 2 hours.
  • Heat the rest of the milk with the butter. Add the soaked sago and stir continuously until the sago is translucent.
  • Beat the egg yolks and sugar together, then mix them into the sago mixture. Add the salt. Cook for about 5 minutes until the mixture thickens.
  • Add the golden syrup, sprinkle with cinnamon, and serve.
