Delicious Gluten-Free Blueberry Maize Muffins

muffinsThis is the perfect recipe if you do not have a lot of ingredients in the house. I got a message during lockdown from my friend Zelda that said she only got 2 ingredients maize meal and frozen blueberries and she wants to bake gluten-free muffins. After a few test recipes I got to this one. They are light and fluffy, but with that little bit of resistance of the maize flour. I use maize meal and almond flour for this recipe. I have baked it with and without blueberries and both came out perfect.
Ingredients
- Ingredients 
- 1 cup Almond Flour 
- 1 cup Maize meal 
- ½ cup Apple, grated 
- 2 teaspoons baking powder 
- ¼ teaspoon salt 
- ¼ cup xylitol or honey 
- 3 eggs 
- ½ cup milk 
- 3 tablespoon coconut oil, melted 
- ½ cup frozen blueberries 
Directions
- Instructions
- Pre-heat oven to 180C. Grease a muffin pan.
- Mix the dry ingredients together.
- Add all the wet ingredients, mix with a spoon be sure not to over mix the batter. Add the blueberries.
- Spoon into greased muffin pan and bake for 15 minutes.
- Enjoy with butter.
