Unbaked Sago Pudding
Course: Dinner, LunchThe smell of cinnamon always brings me back to my childhood: pancakes, milk tart, “souskluitjies” and sago pudding. Sago pudding is one of those dishes that brings me comfort and also evokes many happy memories. Today, it’s a dish we eagerly look forward to, made every Sunday evening in our home.
Ingredients
1 cup sago
4 cups milk
2 tablespoons butter
2 egg yolks
2 tablespoons sugar
A pinch of salt
2 tablespoons golden syrup
Ground cinnamon to sprinkle
Directions
- Soak the sago in 1½ cups of milk until the milk is absorbed. This takes about 2 hours.
- Heat the rest of the milk with the butter. Add the soaked sago and stir continuously until the sago is translucent.
- Beat the egg yolks and sugar together, then mix them into the sago mixture. Add the salt. Cook for about 5 minutes until the mixture thickens.
- Add the golden syrup, sprinkle with cinnamon, and serve.
